Yuletide 2009

Christmas Eve in my house was awesome. I woke up early to start cooking for our Christmas Eve dinner – this is tradition in my culture. We usually have a feast on Christmas Eve and just kinda hang out and eat left overs on Christmas Day. Anyways, it was my turn to host the Christmas Eve dinner in my house so I started preparing my dishes at like 9am. There were so many other dishes I wanted to prepare but I really didn’t have the necessary ingredients so I had to scour through my cookbooks so I can figure out a recipe for what ever ingredients I already have. I was able to prepare a few yummy dishes! I must say that it all turned out wonderful.

I made pot roast with gravy and roast potatoes and carrots.

Of course, we had to have some veggies and all I could find in the refrigerator were zucchinis and a bag of frozen corn – so I sauteed them in butter. My MIL also gave me turkey breast a few weeks ago – I roasted that! I usually roast a whole turkey but after this experience of roasting just the breast, I don’t think I want to go through roasting an entire turkey when roasting just the breast is easier. I found a super easy recipe online and the turkey turned out so moist and delicious. Not included in the picture is the traditional rice stuffing that I prepare on special occasions.

I also baked some yummy cornbread and for appetizer, we had some fresh spring rolls.

My sister, made some chicken sotanghon soup – so yummy! For dessert, we had some fun jello dessert and some buko-pandan. We were all stuffed! Everyone was happy! Below are some photos taken during our holiday feast ….

Christmas day was spent lounging around the house in our PJs – eating left overs and watching movies. I love Christmas – it makes me happy – spending time with the people I love. How was your holidays?
